Why should you eat cabbage?
White cabbage contains significant amounts of vitamin C and is rich in fibre, potassium, iron, calcium and folic acid. It has substances with anti-cancer effects, preventing breast, colon and lung cancer in particular. Regular consumption of cabbage will improve the functioning of the immune system and cleanse the body of toxins and free radicals. Like other brassica vegetables, it has an antimicrobial effect.
A cabbage compress will have a soothing effect on arthritis and sprains. It is also extremely helpful for breastfeeding mothers - it prevents breast inflammation, and in the event of an ailment, a (necessarily cold) cabbage leaf will alleviate the symptoms. In addition, it helps against fever. In folk medicine, cabbage was used to treat infectious diseases, acne, rashes, abscesses and boils. The consumption of cabbage was believed to cure anaemia, and it was also used against scurvy, a vitamin C deficiency.
White cabbage can be eaten in various forms, raw, boiled, fried, stewed and even pickled. It is primarily used to prepare bigos, stuffed cabbage rolls. It can enrich the taste and texture of soups, such as cabbage soup with potatoes. Other tasty dishes using white cabbage can be: stewed cabbage with prunes or croquettes with cabbage and mushrooms.
Sauerkraut is a low-calorie delicacy - 100 g is only 16 kcal. Proper sauerkraut pickling has certain rules. It is worth sourcing a good quality product - from a local farmer, from a trusted source. Initially, it should be whisked and placed in barrels or a stoneware vessel. There must be no shortage of spices - cumin, sour apples, bay leaves and salt are useful. Initial fermentation under cover should take about 3-5 days. Only after this time can it be transferred tightly into jars.
