Cream of salsify with almonds


Ingredients: 800 g salsify | 200 g carrots | 2 cloves garlic | 250 ml coconut milk | 1 liter of vegetable stock | 1 onion | 30 ml olive oil | 20 g ginger | 10 g of milk thistle | 10 g almonds | salt | pepper .

Design: salsify scrape, put into the water acidulated with vinegar with 1 tbsp flour. Before cooking, remove salsify, cut into pieces of 8-10 cm length. Clean the carrots and onion and also cut into cubes. Ginger and garlic finely. In a saucepan heat the oil and fry the garlic on it with ginger and onion. Add salsify and cook, covered, adding coconut milk and broth. Season to taste with salt and pepper.

In the meantime, on a dry, hot pan, roast almonds and milk thistle. How long roast? Until your milk thistle light fragrant oil.
